Ingredients:
-2 poblano peppers
-2 jalapeno peppers
-1/2 white onion, diced
-3 cloves garlic, minced
-3 tomatillos, husked and chopped
-1/4 cup cilantro, chopped
-1 tablespoon lime juice
-1 teaspoon honey
-1/4 teaspoon salt
-1/4 teaspoon black pepper

Instructions:
1. Preheat oven to 375°F.
2. Place poblano and jalapeno peppers on a baking sheet and roast for 15 minutes, flipping half-way through.
3. Transfer roasted peppers to a bowl and cover with plastic wrap. Allow to cool before removing the skins and seeds.
4. In a food processor, combine roasted peppers, onion, garlic, tomatillos, cilantro, lime juice, honey, salt, and black pepper. Process until everything is well blended.
5. Taste and adjust seasoning as desired.
6. Serve salsa with chips or as a topping for tacos, burritos, or enchiladas. Enjoy!
