Arnold Palmer Cake
Ingredients:
-1 ½ cups all-purpose flour
-1 ½ teaspoons baking powder
-½ teaspoon baking soda
-½ teaspoon salt
-1 ½ sticks (3/4 cup) unsalted butter, at room temperature
-1 cup granulated sugar
-3 large eggs
-1 teaspoon vanilla extract
-½ cup freshly brewed strong black tea, cooled
-½ cup freshly squeezed lemon juice
Instructions:
1. Preheat oven to 350°F. Grease and flour a 9-inch square baking pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In the bowl of a stand mixer, beat the butter and sugar until light and fluffy.
4. Add the eggs, one at a time, beating until combined.
5. Add the vanilla extract and mix until combined.
6. Add the dry ingredients in three batches, alternating with the tea and lemon juice.
7. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
